Acrylamide (AA), an industrial chemical and byproduct of food preparation, is classified by the International Agency for Research on Cancer (IARC) as a probable cancer causing agent. In 2002, AA was discovered in carbohydrate-rich foods commonly consumed in Europe and the U.S. such as potato crisps, chips, breads, pretzels, popcorn, cereals, and coffee. AA is formed in these foods as a result of high temperature cooking in the presence of amino acids and high levels of carbohydrates. AA is also found in tobacco smoke and in some occupational settings. In the body, AA is converted to glycidamide (GA), an epoxide chemical with harmful properties that also has been classified by the IARC as a probable cause of cancer. There is growing evidence that high intake of AA may be associated with hormonal cancers in women.

Using prospectively collected dietary, smoking and occupational exposure information in 368,010 women, the student will investigate AA exposure in relation to the risk of endometrial and epithelial ovarian cancers in the European Prospective Investigation into Cancer and Nutrition (EPIC) cohort. Exposure to AA will be assessed from the diet, smoking, occupation, and with the use of biomarkers of AA and its metabolite GA. Biomarker analyses will be conducted in 500 cases of ovarian cancer and 500 cases of endometrial cancer, and 1000 cancer-free controls.

The student will perform statistical analyses of associations between AA and GA exposure and endometrial and ovarian cancer will be conducted in all women and in subgroups of smoking status (e.g., never smokers), alcohol consumption, body weight, and tumour histology.
The student will also investigate exposure determinants (dietary, smoking, occupational, and demographic) of high AA and GA biomarkers levels in healthy control women.

The position does not involve direct laboratory work, but the student must be able to lias between the laboratory and epidemiologists. The student will be expected to perform statistical analyses of cohort and nested case-control data, to learn epidemiologic methods to support the project, and to publish the results in high-quality peer reviewed journals.
